Ingredients
  

Salad
  • 2-3 cups chopped kale
  • 1/4 cup balsamic dressing, simple green salad dressing, or olive oil and lemon
  • 2-3 oranges, cut into rounds
  • 8 small cooked beets
  • 1 minced shallot
Toppings
  • 1/2 cup truffle ricotta or ricotta cheese
  • 1/2 cup pistachios, chopped
  • 2 tablespoons fresh mint or other chopped herbs such as basil, chives, or thyme

Method
 

Preparation
  1. Massage the kale with a small amount of dressing until the leaves soften.
  2. Slice the beets, oranges, and shallot.
Assembly
  1. Spread a portion of the creamy ricotta layer onto the serving platter. For one serving, use about 3 tablespoons; for 4-6 servings, use about 1/2 cup.
  2. Arrange the remaining ingredients in layers over the base: softened kale, beets, oranges, shallots, pistachios, and herbs.
  3. Finish with olive oil, salt, and pepper if desired.

Notes

The simple green salad dressing works especially well with the kale in this salad. A maple balsamic dressing with a creamier texture also pairs well.
