Ingredients
  

Chocolate Shell
  • 3/4 cup melted coconut oil
  • 1/2 cup cocoa powder (more or less to taste)
  • 2-4 tablespoons natural sweetener (agave or maple syrup, more or less to taste)
  • pinch of salt
Filling
  • roughly 3/4 cup of almond butter (or any nut butter)
Topping
  • sea salt for topping

Method
 

Preparation
  1. Whisk together the melted coconut oil, cocoa powder, sweetener, and salt until combined.
  2. Line a regular size muffin tin with paper liners. Add 1-2 tablespoons of the cocoa mixture to each liner.
  3. Place 2-3 teaspoons of almond butter in the center of each cup, then divide the remaining chocolate mixture over the tops.
  4. If any almond butter extends above the chocolate layer, gently press it down to create an even surface.
Topping and Chilling
  1. Sprinkle each almond butter cup with a pinch of coarse sea salt.
  2. Freeze the cups for one hour or until solid.

Notes

These can be stored in the fridge or freezer. The recipe is adaptable, with cocoa and sweetener amounts adjusted based on how sweet or dark you prefer the chocolate flavor. Peanut butter also works well in place of almond butter.
