Ingredients
  

  • 2 cups rolled oats
  • 1/4 cup + 2 tablespoons olive oil
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 8 medjool dates, pitted
  • 1–2 zucchini, grated and squeezed once (about 2 cups total, divided)
  • 2 eggs
  • 1 teaspoon baking soda
  • pinch of kosher salt
  • chocolate chips (optional, for topping)

Method
 

Preparation
  1. Heat the oven to 350°F (177°C). Reserve about half of the zucchini and chocolate chips to add later. Blend the remaining ingredients together until a cohesive batter forms.
Baking
  1. Fold the reserved zucchini and chocolate chips into the batter. Transfer the mixture to a 9×9 or similar square baking dish.
  2. Bake for 30-40 minutes, until the top is golden brown and the center gently springs back when pressed.
  3. Allow the bars to cool completely for cleaner slices, or serve warm if preferred.
Serving
  1. Serve the bars warm or cold.

Notes

For a version without dates, use 1/2 cup almond butter and 1/2 cup maple syrup, and leave out the dates. This creates a different but still delicious variation.
