Preparation
- Mix dry ingredients (flour, baking powder, salt, cinnamon, nutmeg) together in a bowl.
- In a separate bowl, combine milk and beaten egg.
- Add the milk and egg mixture to the dry ingredients and mix until combined.
- Stir in the melted butter.
- In another bowl, combine 1 tablespoon sugar with the chopped apples and stir into the batter.
Baking
- Fill greased muffin tins with the batter and bake at 350 degrees for about 20 minutes or until the tops are golden brown and spring back when pressed.
Glazing
- For the glaze, combine powdered sugar with vanilla and milk, adding one teaspoon of milk at a time until the desired consistency is reached.
- Drizzle the glaze over cooled muffins before serving.
Notes
Serve warm or at room temperature. Pairs well with coffee or tea. Store in an airtight container for up to 2 days or refrigerate for up to 5 days. For longer storage, freeze for up to 3 months.
