Ingredients
  

For the Sandwich
  • 2 slices whole wheat bread
  • 6 tbs. hummus
  • 6 roasted red peppers Pat dry to prevent sogginess
  • 1/2 cup artichokes, drained and chopped Chop into small pieces for even heating
  • 1/2 cup fresh spinach, chopped Distribute in a thin layer to prevent wilting
  • 4 tbs. mozzarella cheese Use shredded for faster melting
  • cayenne pepper To sprinkle
  • olive oil For drizzling

Method
 

Assembly and Broiling
  1. Divide toppings between the two bread slices in the order: hummus, red pepper, spinach, artichokes, and cheese.
  2. Broil at 400 degrees for about 10 minutes or until cheese is melted.
  3. Sprinkle with cayenne and serve with a drizzle of olive oil.

Notes

Serve hot with a small green salad or sliced fruit. Avoid soggy bread by drying wet ingredients before assembly. Store components separately when possible to maintain texture.
