Ingredients
  

Salad
  • 1 rotisserie chicken, meat pulled off and shredded
  • 2 small heads Chinese green cabbage, shredded
  • 2 cups frozen peas
  • 2 large carrots, shredded
  • 2 cucumbers, diced
  • 1/2 cup chopped green onion
Dressing
  • 1/2 cup sweet chili garlic sauce
  • 6 tablespoons honey
  • 5 tablespoons sesame oil
  • 3 tablespoons vinegar
  • 4 tablespoons lime juice
  • 2 teaspoons wasabi paste
Topping
  • crushed peanuts for topping

Method
 

Preparation
  1. Prepare the peas according to the package directions, then drain and allow them to cool slightly.
  2. Mix the shredded chicken, cabbage, peas, carrots, cucumbers, and green onions in a large bowl. Cover and chill for 1 hour.
Dressing
  1. Whisk together the sweet chili garlic sauce, honey, sesame oil, vinegar, lime juice, and wasabi paste until fully combined. Chill the dressing for 1 hour.
Assembly
  1. Add the dressing to the salad mixture and toss until evenly coated. Finish each serving with crushed peanuts.

Notes

Chilling the salad gives it a cold, refreshing texture, though the full hour can be skipped if you prefer to serve it sooner. The dressing can be adjusted to personal taste by changing the wasabi, vinegar, or lime juice amounts as desired.
