Asparagus and Pea Sauté

A quick and bright side dish combining tender asparagus, sweet peas, and honey that can be made in under 15 minutes.

Ingredients
  

Main ingredients
  • 1 bunch fresh asparagus, chopped Trimmed and chopped into even pieces
  • 12 ounces frozen peas or fresh Thaw quickly if frozen
  • 2 tablespoons butter Can be substituted with olive oil for a vegan option
  • 1 tablespoon honey Can be replaced with maple syrup for a vegan version
  • 1 number shallot, minced Mince finely for even cooking

Method
 

Cooking
  1. Melt butter in a saucepan over medium-high heat.
  2. Add shallot to the pan and sauté for a minute or two, until soft and fragrant.
  3. Add asparagus to the pan and cook, stirring occasionally, until cooked through and slightly golden brown.
  4. Add peas and sauté for a few minutes until heated through.
  5. Stir in honey until well mixed.
  6. Serve warm as a side with chicken, fish, or grains.

Notes

Add a squeeze of lemon or sprinkle of pepper for extra flavor. To store, cool completely and refrigerate in an airtight container for up to 3 days. Reheat gently to avoid mushiness.
