Main Ingredients
  • 10 oz orzo pasta
  • 1 cup frozen peas
  • 2 to 3 pieces ripe avocados Use ripe but firm avocados for best texture.
  • 1/2 cup crumbled bacon Cooked and crumbled.
  • 1 tsp minced garlic Add sparingly for less flavor.
  • feta cheese crumbles Optional, for serving.
  • salt and pepper to taste

Method
 

Cooking the Orzo
  1. Bring a pot of salted water to a boil.
  2. Add orzo to the boiling water and cook according to package directions.
  3. Stir in the frozen peas during the last few minutes of cooking.
  4. Drain the orzo and peas, and return them to the pan.
Mixing Ingredients
  1. Slice the avocados and scoop the cubes into the orzo.
  2. Add the minced garlic to the pan.
  3. Mix in the crumbled bacon.
  4. Season with salt and pepper to taste.
  5. Stir gently until everything is evenly mixed.
  6. Sprinkle feta cheese over each serving.

Notes

Serve warm, at room temperature, or cold in avocado peels. Store leftovers in an airtight container in the refrigerator for up to 2 days. Omit avocado before storage for longer shelf life.
