Cooking the Orzo
- Bring a pot of salted water to a boil.
- Add orzo to the boiling water and cook according to package directions.
- Stir in the frozen peas during the last few minutes of cooking.
- Drain the orzo and peas, and return them to the pan.
Mixing Ingredients
- Slice the avocados and scoop the cubes into the orzo.
- Add the minced garlic to the pan.
- Mix in the crumbled bacon.
- Season with salt and pepper to taste.
- Stir gently until everything is evenly mixed.
- Sprinkle feta cheese over each serving.
Notes
Serve warm, at room temperature, or cold in avocado peels. Store leftovers in an airtight container in the refrigerator for up to 2 days. Omit avocado before storage for longer shelf life.
