Ingredients
  

Avocado Caesar Dressing
  • half an avocado
  • 1/4 cup mayonnaise
  • 1/4 cup water (up to 1/2 cup)
  • 1 large clove garlic
  • 1/2 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
Panko Crispies
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • pinch of salt
Green Beans and Topping
  • 12 oz / 340 g green beans, ends trimmed
  • Parmesan for topping

Method
 

Preparation
  1. Blend the avocado, mayonnaise, water, garlic, Dijon mustard, lemon juice, and salt in a small blender jar until smooth. Adjust with additional water as needed until the dressing reaches a drizzle-friendly consistency.
Topping
  1. Combine panko breadcrumbs, garlic powder, olive oil, and salt in a small microwave-safe bowl.
  2. Microwave the panko mixture in 30 second intervals, stirring after each interval, until the crumbs begin to turn golden, about 2-3 minutes total. Handle carefully as the mixture will be very hot.
Cooking
  1. Boil the green beans for 3-5 minutes until bright green. For a more vivid color, drain and transfer the green beans to a bowl of ice water to stop the cooking process.
Assembly
  1. Arrange the green beans on a platter and add spoonfuls of avocado Caesar dressing.
  2. Finish with panko crispies and grated Parmesan before serving.

Notes

For the best texture, add the panko topping near serving time so it stays crisp alongside the creamy dressing and green beans.
