Ingredients
  

Salad
  • 2 cucumbers, diced, seeds removed (about 2 cups)
  • 3-4 grapefruit or oranges, peeled and chopped (about 2 cups)
  • 2-3 avocados, diced (about 1 1/2 cups)
  • 1/3 cup almonds, chopped
  • 2 tablespoons fresh mint, chopped
  • 3-4 tablespoons fresh chives, chopped
Dressing
  • 1 tablespoon vinegar (can also use lime or lemon juice)
  • 1 1/2 tablespoon honey
  • 1 1/2 tablespoons olive oil
  • salt to taste
  • grapefruit or orange zest to taste

Method
 

Preparation
  1. Combine the diced cucumbers, chopped grapefruit or oranges, almonds, mint, and chives in a bowl, mixing gently to combine.
  2. Whisk together the vinegar, honey, and olive oil for the dressing. Taste and adjust as desired, then drizzle the dressing over the salad mixture. Chill until ready to serve.
  3. Add the diced avocado just before serving and gently fold it into the salad. Finish with additional herbs or almonds if desired.

Notes

For the best presentation, add the avocado right before serving because it softens quickly in the salad. This salad is best enjoyed on the same day it is prepared.
