Ingredients
  

Dressing
  • 1/2 cup water
  • 1/4 cup mayonnaise (optional – see notes)
  • 2 small cloves garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
Salad
  • 1 avocado, divided
  • 1 bunch kale, stems removed, chopped (5-6 cups)
  • Parmesan and/or pepitas for topping

Method
 

Preparation
  1. Cut the avocado in half and set aside one half for the finished salad.
  2. Blend the other avocado half with the water, mayonnaise, garlic, lemon juice, Dijon mustard, and salt until combined. Taste and adjust the seasoning as needed.
  3. Add the chopped kale to a bowl and toss with the dressing until evenly coated.
  4. Mix in pepitas and Parmesan, then top the salad with the reserved avocado half cut into cubes.
Baking
  1. Preheat the oven to 450°F (232°C) with the pan inside so it heats up.
  2. Peel 4 sweet potatoes and cut them into fry-shaped pieces. Toss with a teaspoon or two of olive oil and a sprinkle of salt, pepper, and garlic powder.
  3. Remove the hot pan from the oven, spread the fries evenly on it, and bake for 20 minutes.
  4. Turn the fries and continue baking for about 10 minutes more, until crispy.

Notes

For the sweet potato fries, prepare them first because the salad comes together quickly. Thin fry cuts become crispier, and using a hot pan helps with texture. For a vegan version, omit the Parmesan and use vegan mayonnaise. Mayonnaise adds creaminess and flavor to the dressing, but Greek yogurt can be used for a tangier option or it can be left out for a lighter, thinner dressing.
