Avocado Mojo Bowls with Sweet Potato and Cilantro Sauce

Ingredients
  

Cilantro sauce
  • 1/3 cup avocado oil
  • half an avocado
  • 1/4 cup orange juice
  • 1 tablespoon white vinegar
  • 1 clove garlic
  • 1/4 cup packed cilantro, leaves and stems
  • 1/2 teaspoon coarse kosher salt
  • 1/4 cup mayo (optional, for a creamier sauce)
Sweet potatoes and onions
  • 2 sweet potatoes
  • 1 red onion
  • 2 tablespoons avocado oil
  • 2 tablespoons taco seasoning + a pinch of smoked paprika, optional
Protein
  • protein of choice, such as chicken meatballs or rotisserie chicken

Method
 

Preparation
  1. Preheat the oven to 425°F (218°C).
  2. Peel and cut the sweet potatoes into wedges or another preferred shape.
  3. Arrange the sweet potatoes on a large baking sheet and coat them with the avocado oil and taco seasoning.
  4. Peel the red onion and slice it into thin wedges, then place the pieces around the sweet potatoes on the baking sheet.
Baking
  1. Bake the sweet potatoes and onion for a total of 35 minutes. After 20 minutes, turn the pieces over and add the meatballs if using them.
  2. If using pre-cooked meatballs, place them on the baking sheet for the final 15 minutes of baking so they warm through.
Sauce
  1. Blend the avocado, orange juice, white vinegar, garlic, cilantro, salt, and optional mayonnaise until combined.
  2. Taste the sauce and adjust as needed before setting it aside.
Assembly
  1. Add some sauce to each plate or bowl, then top with the protein, roasted sweet potatoes, and onions.
  2. Serve with the sauce included as part of the bowl.

Notes

For a creamier sauce, add the mayonnaise. The sauce keeps for two days in the fridge. The sauce is not spicy as written, but a jalapeño can be added for heat. If the taco seasoning does not contain corn starch or corn flour, add a light sprinkle (1 teaspoon) with the taco seasoning to help the sweet potatoes develop a crispier golden exterior.
