Ingredients
  

For the dip
  • 2 pieces avocados, seeds and skin removed Use ripe but firm avocados for best texture.
  • 1 piece lime, zest and juice Fresh zest brightens the dip.
  • 2 cloves garlic Adjust to taste.
  • 1 teaspoon salt Taste and adjust after blending.
  • 1 teaspoon black pepper To taste.
  • 1 teaspoon honey Optional, for balancing flavors.
  • 3/4 cup Roasted Salsa Verde Roasted adds depth; bottled is a substitute.
  • 1 handful fresh herbs (cilantro and parsley) Chop coarsely for visible flecks.

Method
 

Preparation
  1. In a small bowl, mix the lime juice, zest, garlic, salt, pepper, and honey.
  2. In a food processor, puree the lime juice mixture, salsa verde, and herbs.
  3. Add the avocados and puree until desired consistency.
Serving
  1. Serve chilled or at just-below-room temperature for best flavor.
  2. Spoon into a shallow bowl and place on a platter with tortilla chips and raw vegetables.

Notes

To keep leftovers fresh, press plastic wrap directly against the surface. Use within 2-3 days.
