  • 8 slices bacon
  • 16 dates
  • 4 oz / 115 g goat cheese
  • toothpicks

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C). Slice each date lengthwise on one side to form an opening, then remove the pit.
  2. Place a small amount of goat cheese inside each date cavity with a spoon, then gently press the date closed.
  3. Cut each bacon slice in half. Wrap each filled date with a bacon piece and hold it in place with a toothpick.
Baking
  1. Arrange the wrapped dates evenly on a raised-edge baking sheet and bake for 10 minutes.
  2. Remove the dates and use the toothpick to turn each one onto its side. Bake for another 5-8 minutes, then rotate to the opposite side and repeat until browned to your preference.
  3. Transfer the baked dates to a paper towel lined plate and let them stand for 5 minutes before serving.
