Ingredients
  

  • 2 medium zucchini, sliced into sticks
  • 1 large egg white
  • 1/3 cup seasoned bread crumbs
  • 1/4 tsp. garlic powder (optional)
  • cooking spray
  • salt and fresh pepper

Method
 

Preparation
  1. Beat the egg white in a small bowl and season with salt and pepper.
  2. Add the breadcrumbs and garlic powder to a ziplock bag and shake to combine.
  3. Coat a cookie sheet with cooking spray and set aside.
  4. Dip zucchini sticks into the egg white mixture, then place them into the breadcrumb mixture in small batches and shake until coated.
  5. Arrange the breaded zucchini sticks in a single layer on the prepared cookie sheet and spray the tops with additional cooking spray.
Baking
  1. Bake the zucchini sticks at 400°F (204°C) for 20–25 minutes, or until golden brown.
Serving
  1. Serve the baked zucchini fries with marinara sauce for dipping.

Notes

Arrange the breaded zucchini sticks in a single layer to help the coating brown evenly during baking.
