Cake
  • 1 1/2 cups whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 1/4 cup sugar
  • 1/2 cup maple syrup
  • 1/2 cup banana puree
  • 1/2 cup oil
  • 1/4 cup water
  • 1 beaten egg (sub 4 teaspoons flax for vegan)
Frosting
  • 1/4 cup natural peanut butter
  • 1/4 cup water
  • 2 tablespoons sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C).
  2. Sift together the flour, baking powder, baking soda, salt, and flax if using in a large bowl.
  3. In a separate bowl, mix the sugar, maple syrup, banana puree, oil, water, and beaten egg.
  4. Pour the wet mixture into the dry ingredients and combine. Transfer the batter to a greased 9×9 baking dish.
Baking
  1. Bake for 20-24 minutes, or until a knife inserted into the center comes out mostly clean.
Frosting
  1. Whisk the peanut butter, sugar, and water together until smooth and fluffy.
  2. Adjust the consistency by adding more peanut butter or water as needed, then spread the frosting over the cooled cake and serve immediately.

Notes

This cake is best enjoyed the same day it is baked. It can also be served without frosting for a lighter version. The frosting amount can be increased by using more peanut butter and water for a fuller topping, as reflected in the nutrition facts.
