Cooking
- Heat vegetable oil in a large pan over medium heat.
- Add the diced chicken and cook until browned and cooked through. Remove from pan and set aside.
- In the same pan, scramble the beaten eggs until fully cooked, then set aside.
- Add mixed vegetables to the pan and stir-fry for a few minutes until tender.
- Stir in the cooked rice and mix well.
- Add the cooked chicken, scrambled eggs, soy sauce, and bang bang sauce. Stir until everything is well coated and heated through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
Serve hot and offer extra bang bang sauce on the side. Great pairings include cucumber salad or steamed greens.
