Ingredients
  

Main Ingredients
  • 2 cups cooked rice Chilled or leftover rice is preferable.
  • 1 lb chicken breast, diced Pat dry for better browning.
  • 2 large eggs, beaten Scramble gently.
  • 1 cup mixed vegetables Can include peas, carrots, and bell peppers.
  • 3 tablespoons bang bang sauce For a spicier version, increase the amount.
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil For frying.
  • to taste Salt and pepper
  • to taste Green onions, chopped For garnish.

Method
 

Cooking
  1. Heat vegetable oil in a large pan over medium heat.
  2. Add the diced chicken and cook until browned and cooked through. Remove from pan and set aside.
  3. In the same pan, scramble the beaten eggs until fully cooked, then set aside.
  4. Add mixed vegetables to the pan and stir-fry for a few minutes until tender.
  5. Stir in the cooked rice and mix well.
  6. Add the cooked chicken, scrambled eggs, soy sauce, and bang bang sauce. Stir until everything is well coated and heated through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.

Notes

Serve hot and offer extra bang bang sauce on the side. Great pairings include cucumber salad or steamed greens.
