Ingredients
  

BBQ Jackfruit Filling
  • 1/4 cup olive oil
  • 14-ounce can young jackfruit in brine, drained and rinsed
  • 1/2 cup canned chickpeas, drained and rinsed
  • 2 cloves garlic
  • 1 tablespoon brown sugar
  • paprika, chili powder, and onion powder, as needed
  • a pinch of salt
  • 1/4 cup barbecue sauce
Slaw
  • pre-made slaw bag mix
  • thinly sliced cabbage + mayo, lemon juice or vinegar, sugar and salt
Assembly
  • toasted buns (preferably brioche buns)
  • avocado, pepperoncini, pickles, hot sauce, or other desired toppings

Method
 

Preparation
  1. Heat the olive oil in a pan over medium-high heat. Add the jackfruit and gently separate it into shreds using the back of a spoon.
  2. Pulse the chickpeas and garlic in a small chopper or food processor until finely chopped.
Cooking
  1. Add the chickpea mixture, brown sugar, and spices to the pan with the jackfruit. Stir until the filling is evenly seasoned.
  2. Add the barbecue sauce and continue cooking until the mixture develops roasted flavor. Allowing more undisturbed time in the pan will encourage more browning.
Serving
  1. Serve the BBQ jackfruit filling on buns topped with slaw and any desired toppings.
