Ingredients
  

Dry ingredients
  • 3 1/2 cups rolled oats
  • 1 cup salted or honey roasted peanuts (chopped if desired)
  • 3/4 cup + 2 tablespoons whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
Wet ingredients
  • 3/4 cup natural peanut butter
  • 1/4 cup canola oil
  • 2/3 cup real maple syrup
  • 2 teaspoons vanilla
  • 1/4 cup milk

Method
 

Preparation
  1. Preheat the oven to 275°F (135°C). Combine the rolled oats, peanuts, whole wheat flour, baking powder, and salt in a large bowl.
  2. Whisk the peanut butter, canola oil, maple syrup, vanilla, and milk together until smooth. Pour the wet mixture over the oat mixture and stir until evenly combined.
Baking
  1. Line a large 9×13 or larger jelly roll pan with parchment paper. Spread the granola mixture evenly across the pan.
  2. Bake for 15 minutes, then stir once. Continue baking for another 15 minutes until the granola is golden and dry on the surface while still slightly soft. Check near the end of baking to avoid over-drying.
Cooling
  1. Allow the granola to cool for 2-3 hours so the clusters can firm up and develop their texture.
Serving
  1. Serve the granola with yogurt, fruit, ice cream, milk, or enjoy it as a snack.

Notes

The granola has the best flavor after it has cooled. Add a small sprinkle of extra sea salt for a salty-sweet finish. You can customize it with different nuts, nut butters, and sweeteners, such as sliced almonds with almond butter or a combination of honey and brown rice syrup.
