  • 1 cup black beans (canned or cooked) Rinse if using canned beans.
  • 1 cup rice (white or brown) Brown rice will need more liquid and time.
  • 1 lb sausage (smoked or fresh) Chorizo or andouille can be used for different flavors.
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 2 cups chicken broth Low-sodium broth can reduce sodium content.
  • 1 teaspoon cumin Toast briefly for better flavor.
  • 1 teaspoon paprika Toast briefly for better flavor.
  • to taste Salt and pepper Adjust to personal preference.
  • 2 tablespoons Olive oil For sautéing.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat and sauté the onion, garlic, and bell pepper until softened.
  2. Add the sausage and cook until browned.
  3. Stir in cumin and paprika, cooking for another minute.
Cooking
  1. Add the rice, black beans, and chicken broth to the pot. Bring to a boil.
  2. Reduce heat to low, cover, and let simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.
Serving
  1. Season with salt and pepper to taste. Serve warm.

Notes

Serve hot with chopped cilantro, sliced green onions, or lime wedges for added freshness. Pairs well with green salad or roasted vegetables.
