Ingredients
  

Filling
  • 4 large eggs
  • 1/2 cup salted butter, melted
  • 1 whole lemon (see notes)
  • 1 1/4 cups cane sugar
  • splash of vanilla (optional)
Crust
  • unbaked 9-inch pie crust
Garnish
  • powdered sugar and lemon slices for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C).
  2. Cut the lemon into sections and remove the seeds. Add the lemon, eggs, melted butter, sugar, and optional vanilla to a blender. Blend until the mixture is very smooth; small flecks of lemon rind may remain.
Assembly
  1. Place the unbaked pie crust into a 9-inch pie pan. Pour the blended filling into the crust.
Baking
  1. Bake for 45 minutes, or until the filling is set.
Serving
  1. Dust the pie with powdered sugar and garnish with lemon slices or a lemon twist. Serve warm for a softer filling or chilled for a thicker, denser texture.

Notes

A whole regular lemon is used in this recipe. The white part of the lemon can add bitterness, so if the lemon has a thick rind and you are sensitive to bitter flavors, remove some or all of the white rind before blending. Lemons with thinner rinds can be blended whole with good results.
