Ingredients
  

Batter
  • 1/2 cup butter, room temperature
  • 1 cup white sugar
  • juice and zest of one lemon
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1 cup blueberries, frozen or fresh
Topping
  • Butter with olive oil and sea salt, for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C). Line a loaf pan with parchment paper.
  2. Beat the butter and sugar together until fluffy. Add the lemon juice, lemon zest, and eggs, then mix to combine.
  3. Add the flour, baking powder, salt, and milk, stirring until the batter is combined. Gently fold in the blueberries.
  4. Transfer the batter to the prepared loaf pan.
Baking
  1. Bake for about 1 hour, until the top is golden brown and the loaf springs back when lightly touched.
  2. Allow the bread to cool, then slice and serve with butter topping.

Notes

This bread is especially enjoyable chilled, so it can be refrigerated before slicing for a denser texture and cleaner slices. Frozen blueberries can be added without thawing; fold them in gently only a few times to help prevent excess color from spreading through the batter. A slight purple tint in the batter is normal, and fresh blueberries also work well.
