Ingredients
  

orange mixture
  • 2 oranges, peeled
  • 1/4 cup organic blue agave
cake
  • 1 cup granulated sugar
  • 3 eggs
  • 1 cup olive oil
  • 2 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
whipped cream
  • 1 pint heavy whipping cream
  • 1/4 cup organic blue agave
topping
  • blueberries, pistachios, and additional agave for topping

Method
 

Preparation
  1. Preheat the oven to 325 degrees Fahrenheit (163 degrees Celsius). Prepare two 8 or 9-inch round cake pans by coating them with non-stick spray or lining the bottoms with parchment paper.
Orange Mixture
  1. Add the peeled oranges and agave to a food processor and pulse until a pulpy juice mixture forms. Set aside.
Baking
  1. Whisk together the sugar, eggs, and olive oil until combined. Mix in the orange mixture.
  2. Add the flour, baking powder, baking soda, and salt, then stir just until the batter comes together.
  3. Divide the batter between the prepared cake pans and gently tap the pans on the counter to release air bubbles.
  4. Bake for 35-45 minutes, until the cake tops spring back when pressed. Allow the cakes to cool completely to room temperature before adding the whipped cream.
Whipped Cream
  1. Beat the heavy whipping cream with an electric mixer until light and fluffy. Fold in the agave.
  2. Spread whipped cream over the first cake layer, keeping it near the center to prevent overflow.
Assembly
  1. Place the second cake layer gently on top of the whipped cream. Add another layer of whipped cream over the top.
  2. Finish with blueberries, pistachios, and additional agave.

Notes

For extra citrus flavor and moisture, orange juice can be simmered into a thick syrup, mixed with a small amount of agave, and poured over the baked cakes after poking holes in the layers. Refrigerating the finished cake works especially well, particularly when using the orange syrup addition.
