  • 1/2 cup kale pesto (or prepared pesto)
  • 1/2 cup chopped sun dried tomatoes packed in olive oil
  • 2 cups shredded Mozzarella cheese
  • 3-4 large eggs

Preparation
  1. Prepare the pizza dough according to package directions.
  2. Preheat the oven to 500 degrees (260°C), or the hottest temperature your oven can reach.
  3. Divide the dough into two pieces. Stretch one piece into a 14-inch round, using flour as needed to prevent sticking, then transfer it to a baking sheet, pizza pan, or baking stone. Freeze the remaining dough piece for a future pizza.
Assembly
  1. Spread a thin layer of kale pesto over the dough. Arrange the sun dried tomatoes evenly over the pesto, then add the mozzarella cheese.
  2. Create three or four small openings in the cheese layer and place the raw eggs into the spaces.
Baking
  1. Bake the pizza on the highest oven rack for 6-10 minutes, until the crust is baked, the cheese is melted and bubbly, and the eggs reach your preferred doneness.
  2. Remove the pizza from the oven, allow it to stand for a few minutes, then slice and serve.
