Broccoli Cheese Rice with Brown Rice and White Beans

Ingredients
  

Rice and vegetables
  • 1 cup uncooked brown rice
  • 1 head broccoli, cut into florets
Cheese sauce
  • 3 tablespoons butter
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • 6 tablespoons almond meal
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup broth as needed
Beans and toppings
  • 1 14-ounce can white beans, rinsed and drained
  • crushed almonds for topping
  • sliced green onions for topping

Method
 

Preparation
  1. Cook the brown rice according to package directions.
  2. Bring enough water to cover the broccoli to a boil. Add the broccoli and cook for 1 minute, or until it turns bright green. Remove it from the water, drain, and place it in a bowl of very cold water to stop the cooking process.
Cooking
  1. Melt the butter in a deep pot. Add the garlic and sauté for about 1 minute until fragrant.
  2. Stir in the almond meal and salt. Cook for 2-3 minutes until the mixture becomes thick and clumpy.
  3. Gradually add the milk, whisking after each addition to smooth the sauce. Let the mixture simmer until slightly thickened, then add half of the cheddar cheese and stir until melted.
Assembly
  1. Finely chop the cooked broccoli while leaving a few larger florets for texture. Combine the broccoli, cooked rice, white beans, and additional broth or milk as needed until evenly mixed.
  2. Sprinkle the remaining cheese over the mixture and cover the pan until the cheese melts.
  3. Finish with crushed almonds and sliced green onions, then season with additional salt and pepper as needed.

Notes

Keep a few larger broccoli florets when chopping to maintain texture contrast in the finished dish.
