  • 1 lb. ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/3 cup hot sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
Whipped feta spread
  • 6 oz / 170 g feta cheese (block or crumbles)
  • 4 oz / 115 g cream cheese
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons water
Brushing
  • 2 tablespoons melted butter + 2 tablespoons hot sauce for brushing

Method
 

Preparation
  1. Add the feta cheese, cream cheese, Greek yogurt, olive oil, and water to a small food processor and blend until thick and spreadable with visible feta pieces.
  2. Combine the ground chicken, panko breadcrumbs, hot sauce, garlic powder, and salt in a medium bowl. Shape the mixture into 4-5 patties.
Cooking
  1. Warm a small amount of oil in a large nonstick skillet over medium-high heat. Cook the patties for 3-4 minutes per side until browned and the centers reach 165°F (74°C).
  2. While the burgers finish cooking, brush the patties with the melted butter and hot sauce mixture.
Assembly
  1. Place the cooked burgers on buns with lettuce and spread the whipped feta over the sandwiches before serving.

Notes

Cook the chicken patties until the centers are fully cooked, then finish with the butter and hot sauce coating for added buffalo flavor.
