Ingredients
  

Wet ingredients
  • ½ cup butter
  • ½ cup white sugar
  • ⅔ cup unpacked brown sugar
  • 2/3 cup smooth peanut butter (chunky is nice too!)
  • ½ teaspoon vanilla extract
  • 1 egg
Dry ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup rolled oats
Mix-ins
  • 1 cup each M&M’s, chopped dark chocolate, chopped Butterfinger

Method
 

Preparation
  1. Preheat oven to 350°F (177°C).
  2. Beat butter, white sugar, and brown sugar together until smooth. Add peanut butter, vanilla extract, and egg, mixing until fully combined.
  3. Whisk together flour, baking soda, and salt in a separate bowl. Stir the dry mixture into the wet ingredients just until moistened, then fold in oats and candies until evenly distributed. Place rounded spoonfuls of dough onto lightly greased cookie sheets.
Baking
  1. Bake the cookies for 8-10 minutes in the preheated oven, until the edges begin to brown.
  2. Leave cookies on the baking sheets for about 5 minutes, then transfer them to wire racks to cool completely.

Notes

The Butterfinger pieces may seem chewy and firm immediately after baking. Allow the cookies to cool fully, and the candy pieces will regain their crisp texture.
