Caramelized Banana Topping
  • 3 bananas, sliced into rounds
  • 1/4 cup coconut oil
  • 1/4 cup real maple syrup
  • sprinkle of cinnamon
  • dash of vanilla
Toppings
  • sea salt, chocolate chips, and other desired toppings

Method
 

Preparation
  1. Prepare the oatmeal according to the package directions. For a creamier texture, cook the oats in milk if desired.
Cooking
  1. Warm the coconut oil in a skillet over medium heat. Add the maple syrup, cinnamon, and vanilla, then cook until the mixture is combined and lightly foamy.
  2. Place the banana rounds into the skillet and simmer for a few minutes on each side until they become soft and plump.
Assembly
  1. Take the skillet off the heat. Mix half of the caramelized bananas into the oatmeal and save the remaining bananas for topping. Add desired toppings before serving.

Notes

The amount of cinnamon caramel sauce in the pan is more than needed for serving with the oatmeal, but it provides the right amount for simmering the bananas.
