Ingredients
  

Chicken and Peppers
  • 1 lbs. boneless skinless chicken thighs
  • 3 bell peppers, sliced
  • 1 teaspoon salt, pepper to taste
  • 1-2 tablespoons olive oil
Fire-Roasted Tomato Sauce
  • 1 tablespoon olive oil
  • half of an onion, chopped
  • 2 cloves garlic, chopped
  • 1–2 chipotle peppers in adobo sauce, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 14-ounce can crushed fire-roasted tomatoes
  • 1⁄2 teaspoon salt
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 425°F (218°C). Pat the chicken dry with paper towels.
  2. Place the chicken and sliced peppers on a baking sheet. Coat with olive oil and season with salt and pepper.
Cooking
  1. Roast the chicken and peppers for 30 minutes, or until the chicken is fully cooked.
  2. While the chicken roasts, warm olive oil in a skillet. Add the onion, garlic, chipotles, and spices, then sauté for about 10 minutes.
  3. Add the tomatoes and salt to the skillet mixture. Simmer for another 10 minutes.
  4. Transfer the sauce to a blender and blend until smooth.
Assembly
  1. Remove the baking sheet from the oven and shred the chicken.
  2. Combine the shredded chicken with the sauce, using as much sauce as desired.
  3. Serve the chicken and peppers with quinoa, rice, cauliflower rice, beans, tortillas, greens, or on its own.

Notes

Combining this with additions like black beans and quinoa can stretch the recipe to 4 servings. When served alone or with fewer additions, it will be closer to 3 servings. Extra sauce is likely and can be saved for later meals; it freezes well and can be added when reheating bowls.
