Ingredients
  

  • 1 huge bunch of fresh cilantro (2 cups packed)
  • 1/2 cup olive oil
  • 2 tablespoons white vinegar
  • 1 clove garlic
  • 1 teaspoon kosher salt
  • 1/2 teaspoon red pepper flakes
  • 1/4 to 1/2 cup water, if needed

Preparation
  1. Add all ingredients to a blender and blend for about 1 minute until the mixture is smooth.
  2. Add water as needed to provide enough volume for the blender to run smoothly.
  3. Taste and adjust the seasoning as needed.

Notes

You can find Gaby’s original recipe on her blog or in her book. This version omits the shallot to reduce sensitivity to raw onion relatives, uses white vinegar instead of red wine vinegar for a sharper tang, and includes a little water when extra blender volume is needed for smoother blending. Keep this in a jar in the fridge for 3-4 days.
