Main Ingredients
  • 1 clove garlic, minced
  • 2 cups chicken broth
  • 1/2 lb. egg noodles ('homestyle', thick and doughy)
  • 1/2 tablespoon cornstarch Dissolved in cold water
  • 3 tablespoons cold water To dissolve the cornstarch
  • 12 oz. cooked, shredded chicken breast Can use leftover or rotisserie chicken
  • 1 tablespoon butter
  • 2 tablespoons milk Warm before adding to prevent sauce separation
  • 1/2 cup shredded cheese (Cheddar and Monterrey Jack) Freshly shredded melts better
  • to taste crumbled bacon or breadcrumbs for topping Optional for added crunch

Method
 

Preparation
  1. Sauté garlic in a medium saucepan with a little olive oil over medium heat until soft and fragrant.
  2. Add chicken broth and bring to a boil.
  3. Add noodles and cook for 8-10 minutes, or until noodles are just barely cooked.
  4. Dissolve the cornstarch in the cold water.
  5. Add the cornstarch mixture to the boiling noodles and boil for about 1 minute.
  6. Remove the pan from heat and add the chicken, stirring to combine everything.
  7. Let noodles cool slightly, about 5 minutes, so the broth can thicken into a sauce.
  8. Put the pan back on low heat, add butter, milk, and cheese, and mix for about 3-4 minutes.
  9. Sprinkle with bacon or breadcrumbs and serve immediately.

Notes

Serve hot straight from the pan. Add a crisp green salad or roasted broccoli to balance the richness. For extra brightness, garnish with chopped parsley or a squeeze of lemon.
