Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the peanut butter, sugar, egg, vanilla extract, baking soda, and salt until well combined.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball with a fork, making a crisscross pattern.
Baking
- Bake for 10-12 minutes or until lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to 4 days. For longer storage, freeze in a single layer; can keep for up to 3 months.
