Ingredients
  

For the Turkey Patties
  • 1/2 lb ground turkey
  • 2 cloves garlic, minced
  • 1/3 cup seasoned bread crumbs
  • 3 tablespoons fresh parsley, chopped
  • 1 beaten egg
  • 3 tablespoons freshly grated parmesan cheese
  • to taste salt and pepper
For the Creamed Spinach Sauce
  • 2 tablespoons unsalted butter
  • 1/4 cup minced onion
  • 2 tablespoons all-purpose flour
  • 1/2 cup fat-free half-and-half, plus more as needed
  • 1/2 cup low-sodium chicken broth
  • to taste kosher salt and black pepper
  • 1 pinch cayenne
  • 1 pinch nutmeg
  • 4 cups chopped fresh spinach
  • 1 tablespoon grated parmesan for sauce
  • 1 squeeze fresh lemon juice
For Serving
  • 4 ciabatta rolls Toast before serving

Method
 

Preparation
  1. Combine ground turkey, minced garlic, bread crumbs, parsley, beaten egg, 3 tablespoons parmesan, salt, and pepper in a bowl.
  2. Form the mixture into 4 even patties.
  3. Chill patties for 10 minutes before grilling.
Cooking
  1. Heat a grill to medium-high.
  2. Grill the patties for a few minutes per side until no longer pink in the middle.
  3. Remove cooked patties and place each on a ciabatta roll.
  4. Melt unsalted butter in a saucepan over medium-low heat.
  5. Add minced onion and cook until translucent.
  6. Stir in flour and cook for 1 minute.
  7. Whisk in half-and-half, chicken broth, salt, cayenne, and nutmeg, and bring to a simmer.
  8. Add chopped spinach and cook until wilted.
  9. Stir in 1 tablespoon grated Parmesan and a squeeze of lemon juice.
Serving
  1. Serve turkey burger on ciabatta roll and spoon the warm creamed spinach sauce over the patty.

Notes

To store, refrigerate cooked patties and sauce separately for up to 3 days. Freeze patties wrapped individually for up to 3 months.
