  • 2 cups water or vegetable broth Using broth will enhance the flavor.
  • 1 lemon lemon (zested and juiced) Zest at the start, juice at the end for brightness.
  • 2 cloves garlic (minced) Mince finely to avoid bitterness.
  • 2 tablespoons olive oil For sautéing garlic and toasting the rice.
  • to taste salt and pepper Adjust after cooking.
  • to taste Fresh herbs (like parsley or dill) for garnish Add just before serving.

Method
 

Preparation
  1. In a pot, heat the olive oil over medium heat and add the minced garlic. Sauté until fragrant.
  2. Add the rice and stir for a minute to toast it lightly.
  3. Pour in the water or broth, lemon juice, lemon zest, salt, and pepper.
Cooking
  1. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  2. Fluff the rice with a fork and stir in fresh herbs before serving.

Notes

Cool rice to room temperature within two hours of cooking. Store in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat gently with a splash of water or broth.
