Preparation
- In a pot, heat the olive oil over medium heat and add the minced garlic. Sauté until fragrant.
- Add the rice and stir for a minute to toast it lightly.
- Pour in the water or broth, lemon juice, lemon zest, salt, and pepper.
Cooking
- Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and stir in fresh herbs before serving.
Notes
Cool rice to room temperature within two hours of cooking. Store in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat gently with a splash of water or broth.
