Dressing
  • 1/3 cup coconut milk
  • 1/2 cup light sour cream
  • 2 tablespoons sugar
  • 1 tablespoon green curry paste
  • 1 teaspoon curry powder
  • 1 teaspoon vinegar
Salad
  • 1 bag preshredded coleslaw
  • 1 cup shredded carrots
  • 1/4 cup golden raisins
  • 1/4 cup sunflower seeds or other nuts
  • fresh cilantro

Method
 

Preparation
  1. Whisk the coconut milk, sour cream, sugar, green curry paste, and curry powder together until combined.
  2. Add the coleslaw and carrots to a large bowl, then toss with the sauce mixture until coated.
  3. Stir in the golden raisins, sunflower seeds, and fresh cilantro until evenly distributed.
Chilling
  1. Refrigerate the salad for 1 hour, then toss again before serving.

Notes

Toss the salad again after chilling to help redistribute the creamy curry mixture.
