Ingredients
  

  • 2 cups rolled oats
  • 8 medjool dates, pits removed
  • 1/2 cup olive oil
  • 1/4 cup real maple syrup
  • 3-4 carrots, peeled and shredded (about 2 cups total)
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • walnuts or raisins (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C). Shred the carrots before preparing the batter.
  2. Combine all ingredients in a blender and process until a chunky batter forms.
  3. Transfer the batter into a greased or lined muffin tin.
Baking
  1. Bake the muffins for 15-18 minutes, checking that the tops spring back gently when pressed.
  2. Serve the muffins warm with butter and/or honey, or enjoy them cold.

Notes

If the dates are firm, soak them in hot water briefly before blending to help them soften and combine more easily.
