Ingredients
  

Chicken & Sauce
  • 4 pieces boneless, skinless chicken thighs Pat dry before coating for better sauce adherence.
  • 1 cup barbecue sauce Use your favorite variety.
  • 1 tablespoon honey Adjust to taste if less sweetness is desired.
  • 1 cup chicken broth Use low sodium if preferred.
Rice & Seasoning
  • 2 cups cooked rice Can use leftover rice for faster assembly.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste.
Garnish
  • As needed Chopped green onions For garnish and added flavor.

Method
 

Preparation
  1. In a large skillet, combine the barbecue sauce, honey, garlic powder, onion powder, salt, and pepper.
  2. Add the chicken thighs to the skillet and coat them in the sauce.
  3. Pour in the chicken broth and bring to a simmer.
Cooking
  1. Cover and cook for about 15 minutes or until the chicken is cooked through.
  2. Remove the chicken and set aside.
  3. Stir in the cooked rice and mix well with the sauce.
  4. Slice the chicken and serve it on top of the rice, garnished with chopped green onions.

Notes

Consider adding a side of steamed broccoli or a crisp salad for contrast. Pair with a light drink to balance flavors.
