Preparation
- Cream the white sugar, brown sugar, and soft butter until light.
- Beat in the eggs, then mix in the mashed bananas and maple flavoring.
- Add the flour, oatmeal, and baking soda and mix until just combined.
- Pour the batter into a greased 9x5 pan and smooth the top.
Baking
- Bake at 350°F for 45–50 minutes, testing with a toothpick for doneness.
- Remove from the oven when a toothpick comes out with a few moist crumbs; do not overbake.
Notes
Serve slices warm or at room temperature. Store wrapped in plastic for 2-3 days at room temperature or for up to a week in the fridge. Can be frozen for up to 3 months.
