Ingredients
  

For the bread
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, soft Should be softened.
  • 2 large eggs
  • 3-4 large bananas, mashed Use very ripe bananas for best flavor.
  • 1 teaspoon maple flavoring Can substitute with real maple syrup.
  • 1 1/2 cups flour Measure by spooning and leveling.
  • 1/2 cup oatmeal Old-fashioned or quick oats both work.
  • 1 teaspoon baking soda

Method
 

Preparation
  1. Cream the white sugar, brown sugar, and soft butter until light.
  2. Beat in the eggs, then mix in the mashed bananas and maple flavoring.
  3. Add the flour, oatmeal, and baking soda and mix until just combined.
  4. Pour the batter into a greased 9x5 pan and smooth the top.
Baking
  1. Bake at 350°F for 45–50 minutes, testing with a toothpick for doneness.
  2. Remove from the oven when a toothpick comes out with a few moist crumbs; do not overbake.

Notes

Serve slices warm or at room temperature. Store wrapped in plastic for 2-3 days at room temperature or for up to a week in the fridge. Can be frozen for up to 3 months.
