Cake Bites
  • 1 box mix of chocolate cake (or standard amount of cake for a 9×13 pan if made from scratch)
  • 1 12.5 oz / 355 g can chocolate frosting
  • 1 cup chocolate chips
  • 1/2 teaspoon peppermint extract
  • 1 box mix of chocolate cake (or standard amount of cake for a 9x13 pan if made from scratch)
Coating and Decorations
  • almond bark for coating
  • melted chocolate for drizzling
  • sprinkles for decorating

Method
 

Preparation
  1. Bake the cake according to the package directions, slightly underbaking if desired.
  2. Crumble the baked cake into a large mixing bowl. Add the frosting and peppermint extract, then mix by hand until the texture becomes smooth and evenly combined.
  3. Stir in the chocolate chips. Chill the mixture briefly so it is easier to handle, then roll into balls and freeze until firm.
Assembly
  1. Melt the almond bark. Coat each chilled cake ball in the melted almond bark and place on wax paper or foil.
  2. Drizzle the coated bites with melted chocolate, add sprinkles, and allow the coating to set.
  3. Transfer the finished cake bites back to the refrigerator or freezer for storage until serving.

Notes

Keep the cake mixture chilled before coating to help the bites hold their shape during assembly.
