Ingredients
  

Main Ingredients
  • 1 ripe, juicy nectarine Use a ripe but firm nectarine for best texture.
  • 1 1/2 tablespoons diced red onion Finely dice to avoid overpowering bites.
  • 1 1/2 teaspoons minced jalapeno (seeds and ribs removed) Control heat by removing seeds and ribs.
  • 1/2 teaspoon lime juice Can be adjusted based on taste.
  • 1/2 teaspoon honey Can be substituted with agave for vegan option.
  • 1 teaspoon sugar (optional) Use if the nectarine isn’t very juicy.
  • 4 fresh basil leaves Cut into ribbons and add just before serving.

Method
 

Preparation
  1. Dice the nectarine.
  2. Add sugar if the nectarine isn’t very juicy and let sit for a few minutes.
  3. Add the diced red onion and minced jalapeño.
  4. Stir in honey and lime juice.
  5. Add a sprinkle of salt or sugar depending on desired flavor.
  6. Just before serving, cut the basil into ribbons and sprinkle over the top.

Notes

Store salsa in an airtight container for 2 to 3 days in the refrigerator. Do not freeze, as it ruins the texture of the fruit.
