Preparation
- Combine the sugar, water, cilantro, and jalapeño in a small saucepan and bring to a low simmer for about 5 minutes, allowing the sugar to dissolve and the flavors to infuse.
- Strain out the cilantro and jalapeño, then transfer the syrup to a jar or small pitcher for use in the drink.
- Combine the Tajin, salt, and sugar on a small plate. Coat the rim of the glass with a little lime juice or simple syrup, then dip it into the seasoning mixture.
Assembly
- Add a few ice cubes to the glass.
- Pour in 1.5 ounces lime juice, 2 ounces simple syrup, and tonic water to taste. Stir gently in the glass or mix with a shaker before serving.
Notes
Tonic water adds a bitter flavor from quinine, but some people may prefer to avoid it because of sensitivity or pregnancy considerations. For a different option, use a sparkling water with a bitter citrus element, add a small amount of bitters, choose a sparkling juice for a sweeter drink, or use plain sparkling water. Prepare lime juice ahead by juicing several limes and keep lime juice and simple syrup ready in pitchers or containers for quick drinks.
