  • 1.5 cups cooked breakfast sausage or bacon Drained before mixing.
  • 1 medium diced onion
  • 1.5 cups shredded mozzarella cheese Can substitute with cheddar for flavor variation.
  • 7 large beaten eggs Beaten until smooth for even setting.
  • 2-3 handfuls fresh spinach Roughly chopped and excess water squeezed out.
  • 0.5 cup chopped roasted red pepper Should be well-drained to prevent excess moisture.
  • to taste salt and pepper Adjust based on preference.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Mix all ingredients in a large bowl until combined.
  3. Pour the mixture into a greased baking dish.
  4. Bake for about 40 minutes until the center is mostly set but slightly jiggly.
  5. Let stand for about 10 minutes before slicing.

Notes

Pair with a green salad and a light dressing for a refreshing contrast. Can be served warm or at room temperature. Best if allowed to rest for 10 minutes before slicing for cleaner pieces.
