  • 1 lb ground pork sausage Use a flavorful pork sausage to reduce the need for extra salt.
  • 1 tablespoon taco seasoning Use low-sodium or homemade to reduce sodium.
  • 2 cans (14 oz) fire-roasted tomatoes with garlic These add depth of flavor.
  • 14 oz water Use as needed to adjust broth consistency.
  • 2 1/2 cups white hominy Canned is recommended for quicker cooking.
  • 1/2 cup packed fresh cilantro Add at the end for fresh flavor.
  • to taste sour cream For topping.
  • to taste tortilla chips For topping and crunch.

Method
 

Cook the sausage
  1. Cook the sausage in a large pot with the taco seasoning.
  2. Drain the cooked sausage well.
Build the soup
  1. Return the sausage to the pot and add the fire-roasted tomatoes, water, and hominy.
  2. Simmer the mixture for 10-15 minutes.
Serve
  1. Add the chopped cilantro just before serving.
  2. Top each bowl with sour cream and tortilla chips.

Notes

Offer lime wedges on the side for a bright squeeze of acid. Serve with warm corn tortillas or a simple green salad for a complete meal. Cool before storing; refrigerate for up to 3-4 days or freeze for up to 3 months. Reheat gently on low heat, adding water if necessary.
