Method
Cook the sausage
- Cook the sausage in a large pot with the taco seasoning.
- Drain the cooked sausage well.
Build the soup
- Return the sausage to the pot and add the fire-roasted tomatoes, water, and hominy.
- Simmer the mixture for 10-15 minutes.
Serve
- Add the chopped cilantro just before serving.
- Top each bowl with sour cream and tortilla chips.
Notes
Offer lime wedges on the side for a bright squeeze of acid. Serve with warm corn tortillas or a simple green salad for a complete meal. Cool before storing; refrigerate for up to 3-4 days or freeze for up to 3 months. Reheat gently on low heat, adding water if necessary.
