Ingredients
  

Roasting
  • 2 sweet potatoes, peeled and cut into wedges
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon chili powder
  • a pinch of cayenne pepper
  • salt and pepper, as needed
Topping
  • 2 tablespoons roasted sesame oil
  • 2 tablespoons tahini
  • 2 tablespoons sesame seeds
  • fresh cilantro

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Toss the sweet potato wedges with vegetable oil, chili powder, cayenne pepper, and salt and pepper until evenly coated.
  2. Arrange the coated sweet potatoes on a baking sheet and roast for 20 minutes, gently stirring every 5-10 minutes.
Cooking
  1. Raise the oven temperature to 400°F (204°C) and continue roasting for another 5-10 minutes, stirring the wedges as needed to keep them from over-browning.
  2. Remove the sweet potatoes from the oven and allow them to cool slightly.
Assembly
  1. Transfer the sweet potatoes to a platter or finish them directly on the baking sheet. Drizzle with roasted sesame oil and tahini, then add sesame seeds and cilantro leaves.
  2. Serve immediately.
