Main Ingredients
  • 1 cup orzo Use medium orzo for even cooking.
  • 1 pound shrimp, peeled and deveined Use medium to large shrimp for best results.
  • 2 tablespoons olive oil For frying.
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cups chicken or vegetable broth Vegetable broth keeps it vegetarian-friendly.
  • 1 lemon juice and zest Zest before juicing to avoid bitterness.
  • 1/2 cup crumbled feta cheese Crumble by hand for a rustic texture.
  • 2 cups fresh spinach Add at the end to wilt quickly.

  • to taste Black pepper
  • 1/4 teaspoon red pepper flakes (optional) For heat.
  • 2 tablespoons chopped fresh parsley For garnish.

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until soft.
  3. Add garlic and cook for one minute.
  4. Add orzo and toast lightly, stirring.
  5. Pour in broth and bring to a simmer.
  6. Cook orzo until almost tender, stirring occasionally.
Cooking
  1. While orzo cooks, season shrimp with salt and pepper.
  2. Push orzo to the side and add shrimp to the skillet.
  3. Cook shrimp until pink and opaque on both sides.
  4. Add cherry tomatoes, spinach, lemon juice, and zest.
  5. Stir in feta and parsley until combined.
  6. Taste and adjust salt and pepper.
  7. Remove from heat and let rest for one minute before serving.

Notes

Serve warm in shallow bowls with a wedge of lemon on the side. Can be paired with a simple green salad or cucumber and dill side. For drinks, a dry white wine like Sauvignon Blanc complements the dish well.
