  • 1/2 cup dessert hummus or ricotta cheese Dessert hummus is typically flavored and sweet.

  • splash of milk milk Just a small amount to enhance the egg mixture.
  • 1 medium sliced bananas Pat dry to reduce moisture.
  • 1 cup sliced strawberries Fresh fruit can be substituted for other options.
  • optional to taste extra peanut butter or maple syrup Add on top before serving.

Method
 

Preparation
  1. Assemble the sandwich: place bread, dessert hummus or peanut butter, and fruit between two slices of bread.
  2. In a shallow bowl, whisk the eggs with a splash of milk to create the egg mixture.
Cooking
  1. Dip the entire sandwich in the egg mixture.
  2. Fry on a panini press or griddle until golden on both sides.
  3. Top with maple syrup.
  4. Cut the sandwich in half and serve warm.
  5. Optionally, add extra maple syrup or peanut butter on top, and serve with fresh fruit or a small side salad.
