Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- Put oats into the food processor and pulse until a coarse flour forms.
- Add all-purpose flour, 1.5 cups of sugar, and 1/4 teaspoon of salt to the food processor and pulse a few times to mix.
- Cut the chilled butter into 1/2 inch cubes and add to the flour mixture.
- Process until the butter is evenly distributed but the mixture is still crumbly, about 30 to 60 seconds.
- Reserve 1.5 cups of the mixture to use as the topping.
- Press the remaining mixture into the bottom of the pan to form the crust.
Baking
- Bake the crust for 12 to 15 minutes.
- Cool the crust for at least 10 minutes.
- Whisk the eggs in a large bowl.
- Add 2 cups of sugar, sour cream, 3/4 cup flour, a pinch of salt, lemon zest, and vanilla extract to the eggs and whisk to combine.
- Gently fold the frozen mixed berries into the filling mixture.
- Spoon the berry filling over the cooled crust.
- Sprinkle the reserved flour-oat mixture evenly over the filling.
- Bake the bars for 45 to 55 minutes until set.
- Cool the bars for at least 1 hour before cutting into bars.
Notes
Serve the bars warm or at room temperature. Add a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence. Store cooled bars in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.
