Ingredients
  

  • 2 cups frozen peaches
  • 1/2 cup cashews
  • 12 oz / 340 g tofu (see notes)
  • 1/4 cup liquid sweetener – agave, maple syrup, or honey (more or less to taste)
  • 1 tablespoon lemon juice (more or less to taste)
  • 1 probiotic capsule (optional! see notes)

Method
 

Preparation
  1. Add all ingredients to a high-speed blender.
  2. Blend on a high setting until the mixture becomes completely smooth.
  3. Transfer the finished yogurt to jars and store in the refrigerator for up to 5 days.

Notes

Tofu can be made with either silken or firm tofu. Firm tofu creates a more structured yogurt, while silken tofu gives a smoother, softer texture. If blending is difficult, add 1/4 to 1/2 cup of non-dairy milk. Thawing the peaches first can make blending easier. For a probiotic addition, mix a probiotic capsule into the blender; some batches may have a slightly chalky texture with this addition, and the smoother version may be preferred.
