Ingredients
  

Artichoke Basil Spread
  • 1 clove garlic
  • 1 14-ounce can chickpeas or white beans, rinsed and drained
  • a handful of fresh basil
  • juice of one lemon (or two, if you prefer more tang)
  • a generous drizzle of olive oil
  • salt and pepper, as needed
  • 1 heaping cup canned or jarred artichoke hearts, drained
  • about 2 cups fresh baby spinach or other greens
Serving
  • 10 small pieces of whole wheat bread, toasted

Method
 

Preparation
  1. Add the garlic, chickpeas or white beans, and about half of the basil to a food processor. Pulse until the mixture is finely minced and crumbly.
  2. Slice the remaining basil into ribbons and chop the artichoke hearts.
  3. Combine the bean mixture with the lemon juice, basil, olive oil, salt, pepper, and chopped artichoke hearts. Adjust the seasoning to taste.
  4. Mix in the spinach or greens just before serving.
  5. Serve the spread on the toasted whole wheat bread.

Notes

If saving part of the mixture for later, keep the spinach separate and add it just before serving to help prevent it from becoming soggy. For the nutrition label, 1/3 cup olive oil and 1/2 teaspoon salt were used.
