Ingredients
  

Main Ingredients
  • 2 medium zucchini, sliced into sticks Use firmer, younger zucchini for less moisture.
  • 1 large egg white Beaten until slightly frothy to help crumbs stick.
  • 1/3 cup seasoned bread crumbs Panko-style seasoned crumbs yield extra crunch.
  • 1/4 tsp garlic powder Optional for added flavor.
  • cooking spray Lightly spray for even browning.
  • salt To taste.
  • fresh pepper To taste.

Method
 

Preparation
  1. Beat the egg whites in a small bowl and season with salt and pepper.
  2. Place the breadcrumbs and garlic powder in a ziplock bag and shake well.
  3. Spray a cookie sheet with cooking spray and set aside.
  4. Dip the zucchini sticks into the egg, then place them into the breadcrumb mixture a few at a time and shake to coat.
  5. Place the breaded zucchini in a single layer on the prepared cookie sheet and spray more cooking spray on top.
Cooking
  1. Bake at 400°F (200°C) for 20-25 minutes, or until golden brown.

Notes

Serve immediately for the best texture. Let the fries cool before storing in an airtight container for up to 3 days. Re-crisp in the oven at 375°F (190°C) for 8-10 minutes.
